Lazy Sunday

Today was a very lazy Sunday. KStead is still sick and I have a sinus infection...no fun. We decided not to leave the house today and just stay in and get better. I always try to make a home cooked dinner on Sundays. Since we didn't leave the house I had to make due with whatever we had in the kitchen.

The staples in my house are jasmine rice, a bag or 2 of Trader Joes frozen sweet corn, and Trader Joes roasted salsa. I can always find something to make with those 3 ingredients together or by themselves. I decided to make shrimp and sauteed vegetables over rice.



Ingredients
1 lb of shrimp, I used a bag of large frozen cooked shrimp from Trader Joes
1 cup Trader Joes frozen sweet corn
Half red and green peppers, diced the same size as the pieces of corn
Half a white onion, diced
1 teaspoon of garlic
1 teaspoon lemon juice
Trader Joes roasted salsa
Cilantro to garnish

Heat a large pan and coat the bottom with olive oil.
Add garlic and heat for about 15 seconds.
Add the red and green peppers, onions, and corn. Sprinkle salt and pepper on top. Saute until onions are translucent. About 5 minutes.
Remove from heat and place in a bowl.
Add a little more olive oil to the pan and heat up the shrimp. Sprinkle with pepper. If you are using fresh shrimp, cook until shrimp is pink.
Add the vegetables back to the pan.
Add a teaspoon of lemon juice and mix well.
Serve over a bed of jasmine rice and garnish with cilantro and salsa.
